		<description><![CDATA[Dr. Doherty’s Super Juice

Ingredients 

2 bags of organic green tea (decaffeinated or regular) or white tea (see notes)
1 ounce Knudsen cranberry juice concentrate (see notes)
1 ounce Knudsen pomegranate juice concentrate (see notes)
Thumb-sized piece of fresh ginger, peeled and sliced
½ tsp ground cinnamon (or one cinnamon stick)
Stevia (or other natural sweetener) to taste 

Instructions 

Add all together in a heatproof container that will hold about 2 quarts. (I use a large soup pot.)

Pour one large kettle of boiling water over ingredients. 

Let steep 3 to 5 minutes (or longer). 

Remove ginger and tea bags. 

Serve hot or cold. Refrigerate super juice for up to 4 days. 

Shirley’s Notes: According to Knudsen’s website, each ounce of its cranberry juice concentrate equals about 144 berries and each ounce of its pomegranate juice concentrate equals 2 pomegranates---impressive! For the cinnamon factor, I actually prefer adding a cinnamon stick versus including ground cinnamon because ground cinnamon seems to settle to the bottom and get wasted. I still use an old CorningWare tea pot that belonged to my grandmother on a daily basis. It holds 3 cups of water, so I use 1 ½ pots of boiling water to make my super juice. I can’t get Knudsen concentrates at my local stores, so sometimes I “cheat” and use a cup each of cranberry juice and pomegranate juice instead. Of course, one has to be sure to get juices that are completely juice with little or no added sugar, and even then, the resulting super juice is not as super as the original recipe made with the Knudsen juice concentrates. FYI--The photos shown are of the Super Juice made using the latter recipe. The original Super Juice is usually paler in color. One final note ... Dr. Doherty states that some folks do experience a detox reaction from green tea. She suggests that weaker green tea be used (i.e., steep bags less time) or that white tea be substituted.]]></description>

		<description><![CDATA[Pumpkin Spice “Latte” (Non-Coffee, Gluten Free, Dairy Free, Refined Sugar Free)

Ingredients 

About 1 ½ cups of unsweetened almond milk (or any milk of your choice; see notes)

About 3 tbsp pumpkin butter (I used this gfe recipe, which uses honey, but as stated in the recipe maple syrup or agave nectar can be substituted for an equally delicious vegan option) 

Instructions 

Stovetop method: Add milk to saucepan. Heat over medium to medium-high heat. Slowly stir in pumpkin butter. (I use my mini whisk, which is great for mixing single servings of beverages.) You want the latte mixture to steam, but not boil, so be vigilant. Fill mug. Enjoy! 

Microwave method: Fill mug to almost full; leave about ¾ to 1 inch at the top. Whisk or stir in pumpkin butter. Microwave on HIGH for about 2 ½ minutes, hitting PAUSE to stir about halfway through. Enjoy! 

Makes one serving. 

Shirley’s Notes: I love this non-coffee pumpkin spice latte made with almond milk. The texture is perfection---velvety smooth. It actually looks like pumpkin pie “batter,” too. If you want to substitute full-fat coconut milk, you’ll want to use a mixture of full-fat coconut milk and water. If you have a mug that holds 1 1/2 cups, I recommend using about 1 1/4 cup of full-fat coconut milk and 1/4 cup water. Cashew milk is another great option. And if you consume cow dairy, then regular milk would be fine, but I would use regular milk or 2% milk. If you drink Vanilla Almond Milk, you may not need as much pumpkin butter, but your Vanilla Pumpkin Spice Latte will no doubt be equally delicious. You may top your latte with some of my gluten-free, dairy-free Honey Whipped Cream or Diane’s gluten-free, dairy-free, vegan whipped cream for a truly decadent delight.]]></description>

		<description><![CDATA[Frozen Watermelon Margaritas

3 cups of watermelon, cubed (without rinds or seeds) and already chilled

1/8 cup lime juice

½ cup tequila

2 - 3 tbsp grenadine (optional; for more dramatic color, but also adds sweetness ... you can even make your own grenadine syrup using pomegranates or POM Wonderful juice)

3 tbsp Cointreau, Triple Sec, or Grand Marnier liqueur (I used Triple Sec because that’s what we had on hand)

2 tbsp sugar, or more to taste (I used coconut sugar)

Place all ingredients in blender and blend until smooth. Pour into already frozen tub of your ice cream maker.

Rinse out blender pitcher and set aside.

Churn for about 15 minutes or until perfect frozen cocktail consistency.

Serve. Remove any leftover frozen margaritas from the ice cream tub and place in the blender pitcher. Store pitcher in the freezer. For the second round, be sure to pull the pitcher out several minutes before you wish to serve. If the ingredients have gotten “chunky” while in the freezer, you may even want to blend your ingredients a few minutes before serving. Oh, what the heck, just leave the pitcher nearby, because you will slurp down these babies a lot faster than you can get through the steamed crabs (or other delectables) that you might be enjoying with your margaritas. Especially if the temps are still warm enough. “Indian summers” do happen. And they happen a lot here in our part ofVirginia. We’ve eaten crabs outside with such suitable liquid refreshment as late as Halloween before. I love it when that happens!
