		<description><![CDATA[Black-Eyed Pea, Ham, and Chicken Soup

1 pound dried black-eyed peas (I don’t recommend using canned as a substitution, but fresh or frozen would work well)

1 ham bone (ideally, with at least about a cup of meat remaining on it)

2 cups, cut-up chicken

2 diced onions

2 cups diced or sliced carrots (I prefer slices, but I halve the larger slices)

1 cup diced celery

6 cloves garlic (I used 3 tbsp minced garlic)

6 – 8 cups of chicken broth (I used my homemade broth and just kept adding until my crockpot was almost full)

1/2 tsp Italian seasoning

1 tsp coarse sea salt (any salt will work though)

Soak your beans overnight. Drain and pick out the undesirables (e.g., discolored   beans) in the morning.

Use a 5 to 6 quart crockpot. I used my oval SmartPot   add link … This recipe will serve a lot.

Dice the veggies, and add them to the crockpot with the black-eyed peas that have been soaked and drained.

Pour in broth, and stir in Italian seasoning and salt.

Add ham bone. You can also add the chicken at this point, or save it until closer to the end of cooking time. As your chicken is already cooked, it’s your preference on when you want to add it. I did add mine at the beginning and the soup was great, but adding it at the end would have also worked and kept the chicken in nice little chunks.

Cover and cook on low for 8 hours, or on high for about 6. About a half hour to an hour before serving, use an immersible blender to smash up about 1 cup of beans. If you don't have an immersible blender, scoop out 1 cup of beans, blend them in a traditional blender, and add back to the soup. You will really only need to blend for a few seconds. Stir after blending. The soup will thicken and have the most wonderful color.

		<description><![CDATA[Wassail

2 quarts apple cider
1 cup pineapple juice
1/2 cup honey
3 sticks cinnamon
2 whole cloves
1 whole orange, cut in rings
brandy, optional

Use a 4 - 6 quart slow cooker/crockpot. This recipe makes 9 cups of juice.

Put all of the ingredients into the crockpot (not the brandy). Wash your orange well, and cut off each end. Slice the remaining orange into rings, and float the pieces on the top of the juice.

Cook on high for 2 hours, or on low for about 4. You want the juice completely hot, and the flavor of the cloves and the cinnamon to have permeated.

Ladle into mugs. If you are going to add the brandy, put a shot into each mug, then top with the hot cider.

If serving to guests, provide a ladle, and keep the crockpot lid off, and the pot turned to low. If on warm with the lid off, it won't stay quite hot enough.

Shirley’s Notes: (Stephanie has used organic apple juice successfully. Our bees’ honey tastes just right if this recipe, but if you don’t eat honey, feel free to experiment with another sweetener. Last, I find I have to keep my slow cooker on High to keep the wassail hot enough. I do remove the top from time to time for periods of serving, but the High serving works best for me.)]]></description>

1 tablespoon olive oil
1 large yellow onion, sliced thin
3 pounds (or larger) pork tenderloin or pork butt
1/4 teaspoon ground cinnamon
1 teaspoon Italian seasoning 
1/2 teaspoon sea salt
4 garlic cloves (whole or minced)
1 (14-ounce) can diced tomatoes with green chilies
1 cup POM Wonderful pomegranate juice
1/4 cup balsamic vinegar
2 tablespoons maple syrup

Use a large slow cooker. (I used my large oval Crockpot.) Pour olive oil in slow cooker; tilt so olive oil is evenly coating the bottom of the stoneware. Place onion slices over olive oil.

Place meat in slow cooker. Rub the spices over the surface of the meat. Top meat with garlic and whole can of tomatoes with green chilies. Mix pomegranate juice, balsamic vinegar, and maple syrup, and gently pour over the meat so that the diced tomatoes and green chilies remain on top.

Cover and cook on low for 8 hours, or on high for approximately 5. The meat is done when it has reached desired tenderness. For pork tenderloin, I like it sliceable. For pork butt, I like it to pull apart easily with a fork.

Serve on buns or with a complementary side. I’ll share a side dish recipe next week that’s easy to make, but that also impresses with its looks and taste.

Shirley's Notes: The photo shows two cans of diced tomatoes with green chilies; however, I decided one would be sufficient after I poured it over the pork butt. Feel free to vary ingredients to your liking. Look to the original recipe for more ideas.

		<description><![CDATA[Traditional Turkey Breast

One turkey breast, any size (just be sure it fits in your slow cooker)

One stick (1/2 cup) regular butter (not unsalted) or non-dairy equivalent, melted

Remove any packaging for the turkey breast carefully. (I’ve been surprised by gravy packets before and I’ve been grateful that I didn’t accidentally puncture them with my kitchen shears.)

Rinse turkey breast. Remove any contents from cavity of breast. (If gizzards and liver are included, you can cook those or freeze for another use later.)

Pat dry and place in crockpot.

Melt butter.

Pour butter evenly over turkey breast. (DO NOT add anything else. Nothing. NO additional seasonings. NO water. NOTHING else.)

Cook 4 to 4 1/2 hours on high or 8 to 8 ½ hours on low; cooking on low yields a more tender flavorful breast in this case, I believe. (If frozen, be sure to remove anything in the cavity and cook for about 10 hours or so.)

This turkey breast will be perfectly moist and perfectly seasoned. The skin even browns in my crockpot. I use a 6-qt oval Crockpot SmartPot.

Surprise (Tortilla Chip) Stuffing

One large bag of tortilla chips (about 13 ounces)

1 cup finely chopped onion

¾ - 1 cup finely chopped celery (depending upon how much you like celery)

4 cups (32 ounces) chicken broth (I made mine using Better than Bouillon; canned gluten-free broth or homemade stock would also work fine)

2 tsp poultry seasoning (or sage or other seasoning of choice; adjust amount to taste)

Additional ingredients if desired, like sausage, mushrooms, chestnuts, etc.

Pour tortilla chips into a large bowl. (Do not break tortilla chips into smaller pieces. I did that not knowing any better and it’s really unnecessary. Once softened, the tortilla chips will naturally break into smaller pieces.)

Pour chicken broth over tortilla chips. Stir so that all tortilla chips are covered or moistened by broth. Let “soak” for 30 minutes.

Stir in onion, celery, seasonings, and any optional ingredients.

Pour into lightly greased casserole dish. A 9 x 13 glass dish would be ideal. (I halved the recipe and used a smaller oval casserole dish for my test run.)

Bake uncovered at 350 degrees for 30 minutes. (If you like a drier stuffing, a slightly higher temperature might be a better choice.) If necessary, you can turn the broiler on for the last few minutes to brown the top, but please be cautious. (Dish should be far from broiler itself and only cooked at this temperature for a short time.)

Shirley’s Notes: I’ve read that folks have even “stuffed” their turkey with this stuffing successfully versus baking as a side dish! Remember that the photos shown are of the recipe made when halved.]]></description>
