		<description><![CDATA[Bacon Turkey (or Chicken) Corn Chowder

Ingredients

1 yellow or sweet onion, diced; or 3 green onions, sliced
About 1/3 cup celery, diced (about 4-inch section; mine had leaves, which add wonderful flavor and nutrition)
6 medium-sized potatoes, baked (I used Russett, each about 4 inches long)
½ cup chicken broth/stock
1 ½ cups milk (dairy or non-dairy, I used unsweetened almond milk)
2 cups turkey (or chicken), diced
1 can cream-style corn or equivalent amount of regular canned corn, frozen corn, or roasted corn kernels (see notes)
2 tbsp gluten-free all-purpose flour (optional)
4 slices bacon, diced and cooked (see notes)

Instructions

Cook onion and celery in large microwaveable bowl for about 30 seconds on HIGH.

Remove the pulp from three of the potatoes, mashing with the back of a wooden spoon or potato masher as you add it to the bowl.

Dice remaining potatoes and add to the bowl.

Add chicken broth and milk. Cook 5 minutes on HIGH.

Stir. Add turkey and corn. Sprinkle flour over all; stir again. Cook 5 minutes on HIGH.

Season, if needed. (e.g., salt, pepper, pinch of chipotle powder perhaps)

Top with bacon. Serve.

Shirley’s Notes: I clean my potatoes thoroughly, but do not peel them. I bake them in my microwave using a baked potato bag. (These can easily be made using fabric and batting. My mother-in-law purchased mine at a craft show.) You can also cook the bacon in the bowl and set aside, but leave bacon “drippings” in bowl before you add the onion and celery if you prefer. The small amount of flour added near the end of the cooking time will help thicken the soup nicely, but another thickener may be used or the thickener may be left out. In the latter case, the soup may be cooked a bit longer to thicken, if needed. I’m sure you could also create a lovely vegetarian or vegan version by using white beans or chickpeas in place of the turkey and skipping the bacon. If making this soup on the stove, you’ll want to add some additional broth to the recipe; add that in the beginning when you cook the onion and celery. From that point on, you'd add ingredients as directed above, but cook the amount of time needed for thickening on the stovetop. I'm guessing that this chowder could be prepared in about 30 to 45 minutes on the stovetop.]]></description>

		<description><![CDATA[Gluten-Free, Dairy-Free Tuna or Seafood Chowder

1 to 2 potatoes, peeled and finely diced

2 shredded carrots, about 1 cup or so

1 onion, diced finely

¼ cup butter (dairy or non-dairy)

2 cups chicken broth

1 ½ cups milk (dairy or non-dairy)

Up to 1 lb shrimp (uncooked or cooked),  cut into halves or thirds if large (optional)

1 can tuna (6 ½ ounce), drained and flaked

½ tsp gluten-free Worcestershire sauce (or more, to taste; optional; leave out for refined sugar free)

¼ tsp sea salt

Dash of other seasonings if desired, like chives and thyme

¼ cup flour (or other thickener), if needed

2 strips bacon, cooked and crumbled (optional)

Sautee potatoes in butter in large saucepan or extra deep skillet for about 5 minutes. Add carrots and onion. Continue sautéing until onions are translucent (about 5 minutes more).

Add chicken broth and then gradually add in milk.

Heat over medium heat until mixture is thick and bubbling.

If adding uncooked shrimp, add now and cook for about 5 minutes.

Add tuna, Worcestershire sauce, salt, and any other seasonings.

Add in flour (or other thickener).

Cook over medium low heat until potatoes are adequately softened and chowder is thick and tastes like, well, chowder. Add bacon and if adding cooked shrimp, add now and continue cooking over medium low heat just until heated through.

Serve and enjoy. Makes about 4 servings.

Shirley’s Notes: I used tuna packed in olive oil, so I drained the olive oil from the can into the skillet and added 2 tablespoons of butter before sautéing carrots and onions.  One can use other thickeners like arrowroot, cornstarch, tapioca, potato flakes, or just “cook down” longer over low heat until sauce is reduced/chowder is thickened. (Note that if you are using coconut milk as your non-dairy milk, my friend Carol of Simply … Gluten Free cautions against using arrowroot as a thickener. Read more and get her gorgeous gluten-free, dairy-free Coconut Tarts recipe here.) Finally, like any other soup I make, I’m always game to add in little bits of “this and that” from the refrigerator. This time it was one cup of brown rice. Potatoes and rice together might seem like too much, but the combination worked just fine and the instant thickness put this chowder on the table faster than usual.]]></description>

		<description><![CDATA[Quick and Easy New England Clam Chowder

3 to 4 large russet potatoes

2 6-ounce cans minced clams, drained with liquid reserved

¼ cup butter (dairy or non-dairy)

1 onion, chopped

2 cloves garlic

¼ cup gluten-free flour (or other thickener of your choice)

2 cups of clam liquid and clam broth, combined (see directions)

1 ½ teaspoons clam base (added to water; see directions)

6 ounces full-fat coconut milk plus 6 ounces almond milk (or other non-dairy milk of your choice) or if you eat dairy, you can use one 12-ounce can evaporated milk

1 tsp seasoning salt (or more to taste)

¼ tsp Old Bay seasoning (optional)

Microwave the potatoes about 8-9 minutes or until baked through.

While potatoes are baking, drain clams and reserve juice in a 2-cup measuring cup. Set clams aside.

Set aside cooked potatoes to cool slightly. (You can also use leftover baked potatoes in this recipe.)

In large sauce pan, melt butter and add onion over medium to medium-high heat, stirring occasionally until onions are translucent and cooked most of the way through. Cook about 7 to 8 minutes.

While onions are cooking, fill a teapot/saucepan half way full with water and bring to a boil.

Add garlic to your soup pan. Cook for about 30 seconds, stirring while cooking.

Add flour. Stir to make a roux. (It doesn’t take long at all.) Remove from heat so roux will not burn.

Add boiling water to measuring cup that already contains reserved clam juice, filling to 2-cup level. Stir in 1 ½ tsp clam base. Stir well until clam base is dissolved and becomes clam broth.

Slowly add milk and broth to soup pan and return to heat.

Scoop most of the pulp from one potato, mash it slightly and add to chowder.

Add clams to chowder.

Bring chowder to a boil. Add seasoning salt and Old Bay (if used).

Quickly dice the remaining two potatoes and completely empty skin of the third potato. Add to chowder and heat through for a minute or two. Serve. Enjoy.

Adapt this recipe to your liking. For example, some clam chowder recipes call for crumbled bacon to be added at the end. A gluten-free bread on the side would make for a wonderful meal. I ate my chowder without accompaniment, but Mr. GFE enjoyed a breadstick (gluten-full) with his. There are many gfe "bread" options that would go great with this chowder: Popovers, Garlic Cheese Biscuits, Corn Muffins, Marvelous Cheese Muffins, and Flat and Firm Cornbread, to name a few---all of which can be made dairy free when needed by using ingredients like non-dairy butter, non-dairy milk, and Daiya Cheddar Cheese. (Check out gfe Recipes page for more ideas.)

Shirley’s Notes: I used Better than Bouillon clam base to make clam broth. (All Better than Bouillon soup bases are gluten free.) If you don’t have clam base to make clam broth, you may use chicken broth, or you may replace the water with clam juice and add chicken bouillon or chicken base. The clam flavor will not be quite as strong, but the chowder will still be very good. I've even read about lobster base that I'd like to try. (Perhaps next iteration, this recipe will become a proper seafood chowder.) Even with minced clams, I use my kitchen shears to cut all of the clam pieces very small. (I really hate chunks of super chewy clams.) More potatoes will make this chowder thicker, but note that if there is any leftover, it will thicken consderably upon cooling and additional liquid may need to be added before serving. I leave the skins on the potatoes for the extra nourishment they provide. They cook down most of the way and are pretty tender, so we enjoy them in our soups, but if you prefer, you can discard potato skins.

		<description><![CDATA[No Roll, Never Fail, Press In Pie Crust (Gluten Free, Dairy Free, Egg Free, Soy Free, Nut Free, Vegan)

1 ½ cup gluten-free flour mix (see notes)
1 tbsp granulated sugar
1 tsp salt
½ cup vegetable oil
2 tbsp milk (dairy or non-dairy)
¾ tsp xanthan gum (optional; see notes)

Sift flour, sugar, salt, and xanthan gum into 9-inch pie plate.

In a separate small bowl or large glass measuring cup, add milk to oil and stir vigorously with a fork until oil turns into little droplets. (I usually measure my oil in a glass measuring cup and then add the milk to that cup.)

Pour milk and oil mixture over dry ingredients and mix. (I just use the same fork that I used to mix the oil and milk. It works great.)

Pat crust out with hands, trying to make thickness the same throughout and extending crust as high as you would like on the sides of the pie plate.

Fill and bake per your recipe.

Shirley’s Notes: I have used many different combinations of flours successfully. There will be slight variations in flavor and texture with each. For example, when I used 1 cup of gluten-free flour mix (which is a mixture of Asian white rice flour and cornstarch for me usually) and ½ cup of almond flour (which, of course, made the recipes unsafe for those with nut issues), I thought the crust was a little more crumbly. However, it was still fine for us and I thought it tasted especially good. I rarely use xanthan gum in this recipe, but it will make your crust bind a tad better and, therefore, a little less crumbly. Sometimes the salt stands out in the flavor of the crust, but it provides a nice contrast to sweet fillings or a complementary one to savory fillings. If necessary, you can reduce the amount of salt a bit.
