Hi Lee--It's good to see you again! :-) Sorry for the delayed reply ... I'm on vacation right now. I'm terribly sorry you were glutened. That is just the worst. It definitely reinforces the need for being gluten free, but I know it's a miserable experience. My sympathies. Do what you can to detox quickly, like steamy, hot showers; an epsom salt bath; and walking if you're up to it (any aerobic exercise helps you get rid of toxins). Probiotics and enzymes (like Glutenzyme) can help, too.

Thanks for sharing more of your story and your recovery after going gluten free. I know that it will help others. I'm so glad you husband is supportive. It definitely makes a difference when our loved ones can see us with and without gluten. Nobody wants their family members to suffer.

If you grill, I'd recommend doing the oven-steamed shrimp, but on the grill instead. Super easy ... just put down some aluminum foil first. Beer "can" chicken is another good one. Cayenne-Lime Salmon is great on the grill. Crockpot jambalaya would be good and, of course, appropriate to your area. In fact, you may already have a naturally gluten-free jambalaya recipe that would work well in the slow cooker. ;-) Those are a few ideas for you, but take a look at the Recipes index on my site to get some more. :-)

Hugs,

Hi Shirley, I'm back looking for another recipe. I've been a little wary of eating almost anything since I was definitely glutened on Monday. I'm still feeling the effects 2 days later. I've never had an official diagnosis, but I've been through all of the symptoms and for the last 18 years I've been sick. It started with my gallbladder removal, then an RA diagnosis in '99. Lactose intolerance diagnosed by my daughter a year ago..we did the test. Then just this March she looked at me after I was sick again and in pain and said,"Do you think you might be gluten intolerant?" We got onto the computer and sure enough I fit the profile, or symptoms.
Now my dilemma has been trying to find out where the gluten has come from. My husband has finally accepted that gluten is my problem , because I feel so much better when I'm GF. No hip pain, arm or leg pain and my stomach is normal.
I'm looking for some GF cool recipes since it's so darn hot here. I live in New Orleans and we've been having record heat, so I don't want to heat up my kitchen...any suggestions would be great.
Thanks

Hi Lee--It looks like you are new here--welcome to gfe! :-) I'm so glad you and your husband enjoyed this casserole so much! I can't wait to see what you think of the flourless pizza. I just made that recipe a few nights ago for some friends and they loved it. Hope you will, too ... will be waiting to hear! ;-)

Shirley,
Thank you so much for this recipe! This was one of the best GF recipes I've ever tried. It was great for Cinco de Mayo along with some Spanish rice, and Mexican cornbread. My husband even enjoyed it, and he's not a big fan of Mexican food. Can't wait to try the flourless pizza. Thanks again!
