[...] I don’t think I cook with cabbage near enough. It is surprisingly tasty in Japanese okonomiyaki, savory cabbage pancakes/ pizza, and equally good with an Indian spiced-treatment of caramelized onions and golden cabbage. I’ve even had it in a delightful raw sesame oil salad- so yummy and good for you! You can’t even see the cabbage in the end product. Good for cabbage-haters!
Hey Heather--Great to see you! Ah, someone else who has learned the value of spinach. :-) No, on fake dyes here. The ice cream is delicious. Hope you give it a try some time! ;-)

I love adding spinach for color. Who needs fake food dyes? :)

Ice-cream sounds wonderful Shirley. So minty fresh!

Jennifer--Another insert is a great idea! Why didn't I think of that? Interesting that it filled your IC maker halfway. I think mine was full and it's the 1 1/2 qt one. Hmmm, will have to pay strict attention on the next batch.

Yes, it's smart to keep one's coconut milk chilled .. just for ice cream. ;-)

I did recently buy another insert for the freezer so I could make two batches back to back. Your recipe only seemed to fill up halfway on my ice cream maker, so I think I could double it, and it may still fit in one batch. I'll have to try it and let you know (I have the 1 1/2 quart one, i think). Hmmm... let me go put 2 cans of coconut milk in the fridge now :) LOL!

Hi Jennifer--So glad you made this ice cream that you inspired. ;-) What a testimonial! Yes, I'd love to see that photo of your son getting the last little bit. This amount would be hard to share among five folks. Do they make a bigger ice cream maker? :-)

Have a great Valentine's Day weekend!
