Despite the popularity of Chocolate Chip Cookies (and we have many terrific Chocolate Chip Cookie recipes here on gfe (here are some of them), for some folks their very favorite cookie is Oatmeal Raisin. Count Mr. GFE as one of them! He’d be quite thrilled if I made these classic Oatmeal Raisin Cookies from No Gluten, No Problem.
Pete and Kelli had a disagreement on the proper “add-in” for these Oatmeal Cookies. Pete won; otherwise, these cookies would not be Oatmeal Raisin Cookies and some of you would be unhappy. Here’s Pete’s description of the final recipe: “The cookies are delightfully chewy, with just the right amount of raisins, and thanks to a 1:1 gluten-free flour to oats ratio, plenty oat-y.” Yes, a winner for sure!
