My mom even asked me to make this stuffing for Thanksgiving because it's better than hers---woohoo!!! Of course, it took her a year to tell me that ... hehe ... but I'll gladly accept the compliment and make it again, because it's just so darned easy! As part of our Thanksgiving dinner this weekend, we had the Surprise Stuffing. I have never really been a fan of “real” stuffing and haven’t tried any GF stuffing recipes since I was diagnosed with Celiac. This was such a “crazy” concoction that I thought it would be fun just to have a go at it. It was fantastic! And my non-GF husband had no clue as to how it was made. He said it was much better than the gluten-full version that our lovely church ladies fix. I was doing to GF Happy Dance! This is for any of you “doubters” out there. I remember the surprise we all experienced the first time I made it. How could a no-fuss turkey breast taste go good, but it did and it will once again, as soon as the latest one is done slow cooking. (It's a big one and I didn't put it in until late today. We're not eating it for dinner tonight, so it didn't matter what time I started it.) The stuffing? I'd say it's more smooth than chewy, but it's been a year since I had it last so maybe my memory is off. ;-) Be sure to use whatever seasonings (and amounts) that you enjoy, because some have had said they wished it had a little more "oomph" in that department. I'm not one who likes stuffing heavy on all the traditional seasonings though. Good luck and happy Thanksgiving to you all! I'm definitely going to experiment with adding different flavours to this.
