		<description><![CDATA[Honeybear Brownies (Gluten Free, Dairy Free)

Ingredients

¼ cup coconut oil, liquefied
½ cup granulated sugar healthier alternative (one reader used Stevia in the Raw. I used Demerera sugar; coconut/palm sugar could be used, too—ensure that it’s gluten free)
1/3 cup honey (or slightly less agave nectar for a vegan option; I used our bees’ honey)
2 tsp vanilla extract
2 eggs (flax eggs can be substituted per reader's review/test)
½ cup gluten-free all-purpose flour mix
1/3 cup cocoa powder
½ tsp sea salt
1 cup chopped nuts (I use walnuts most of the time)

Instructions

Preheat oven to 350 degrees Fahrenheit and grease 8 x 8 baking pan.

Add ingredients in order shown, stirring well after each egg is added, and once all ingredients have been added.

Spread batter into baking pan.

Bake for about 20 minutes. Test doneness with toothpick, but you can also tell the brownies are done when they pull away from the sides of the pan. Cool in pan several minutes before cutting.

Shirley’s Notes: I used the mix of finely ground Asian white rice flour and cornstarch that I often use when gluten-free all-purpose flour is required. (I mix a large amount ahead of time---3 parts Asian white rice flour and 2 parts cornstarch---and then measure out what I need.) If you are nut free, I recommend replacing the nuts with sunflower seeds or another ingredient with some texture and bulk. I don’t believe that this recipe will have enough substance if the nuts are simply omitted. A reader reported that she made this recipe using flaxmeal "eggs" and Stevia in the Raw and the brownies came out beautifully. I suspect chia "eggs" would work well, too, but have not personally tried that substitution. Please report back if you make this recipe using chia "eggs." Finally, I'm so often asked by those who eat gluten if a recipe can be made with "regular flour." The answer is, of course! In this case, you'd just substitute "regular" all-purpose flour for the gluten-free all-purpose flour.]]></description>

Ingredients 

¾ cup shredded coconut/coconut flakes
¾ cup almond flour, packed (I prefer Honeyville blanched almond flour)
2 tbsp coconut flour, sifted (may be optional; see notes)
1 tsp baking powder
¼ tsp sea salt
¼ cup brown sugar (or coconut or palm sugar)
Slightly less than 1/3 cup agave nectar (or exactly1/3 cup honey)
2 tbsp coconut oil, liquefied
¼ cup chocolate chips (minis, chips, or chunks; larger chocolate pieces will give you more of a “Samoa” taste, but your cookies may not be as pretty as when using the minis)

Instructions 

Preheat oven to 350 degrees Fahrenheit. Line one baking sheet with parchment paper. 

Spread coconut flakes on a baking sheet. Bake for about 3 minutes, being sure to stir every minute to prevent the flakes from burning. (Note that a few flakes on the edges may actually burn or darken too much. Those can be discarded.) 

While toasting coconut flakes are in the oven and/or cooling after toasting, mix other ingredients adding one by one in large bowl, stirring after each addition. 

Once all ingredients have been added (including cooled, toasted coconut flakes), the mixture will be very thick and you may need to use your clean hands to finish incorporating all of the ingredients. 

Roll cookie batter into balls, slightly less than walnut sized. Place on the parchment lined-baking sheet. 

Using the bottom of a glass or a metal spatula, press balls down slightly to about ½-inch to ¾-inch thickness. 

Bake for about 8 minutes or so. Outer edges should be brown, and middles should be non-glossy, but not very brown. 

Cool on baking sheets for 10 minutes. Cookies will continue baking/setting up during this time, so do not skip this step. Remove from baking sheet to wire rack or serving plate to cool additionally as needed. 

Makes about 15 cookies 2 ½ inches in diameter.

Shirley’s Notes: I always pack my almond flour in the cup, so I'm sure to get the same measurement each time. These cookies might harden over time … perhaps more than you’d like. I actually like the ultra chewiness of them that way and/or even enjoy dunking them in my tea or a glass of almond milk. However, if you find these cookies hardening too much and you would prefer that they stay soft, add a small piece of apple to your container and leave the lid on. Also, omitting some or all of the coconut flour will also produce a softer cookie---most likely more of a drop cookie, which will require a tablespoon measure for placing the batter on the baking sheet---because coconut flour absorbs the liquid in recipes.]]></description>

2 cups almond flour (or ground almonds; I use Honeyville Blanched Almond Flour because it’s finely ground)
1/3 cup honey (or agave nectar)

Filling 

1 cup semisweet chocolate chips (my favorites are Enjoy Life chocolate chips or mega chunks, which are gluten free, dairy free, and grain free; or Ghirardelli semi-sweet chocolate chips, which are gluten free and dairy free)
)
1/2 cup butter (dairy or non-dairy or coconut oil, liquefied or not per readers' input)
pinch of salt
1 tbsp unsweetened cocoa powder
3 eggs
2/3 cup canned full-fat coconut milk
1 tsp vanilla extract (optional)

Instructions

Preheat oven to 350 degrees.

Mix almond flour and honey right in pie plate. Using fingers, pat into a crust. Set pie plate aside.

Melt chocolate chips and butter in medium-sized saucepan using a double boiler.

Add salt, cocoa powder, eggs, coconut milk, and vanilla extract, stirring after each addition until you have a smooth mixture. Whisk, if needed.

Pour filling into crust.

Bake 30 minutes or until filling has puffed and toothpick inserted in center comes out clean. Cool completely.

Refrigerate until ready to serve.

Garnish as desired. I topped this pie with homemade whipped cream (easy to make using whipping cream and confectioner’s sugar or coconut milk and honey for a dairy-free, grain-free, and refined sugar-free version, Honey Whipped Cream). For an even prettier and more impressive pie, you may also top your whipped cream with chocolate shavings or some sifted cocoa powder.

2 cups ripe watermelon, ideally frozen and then slightly thawed

¾ cup full-fat coconut milk

¼ cup honey (or agave nectar for vegan option) 

Blend ingredients in blender for about a minute or so until well blended. 

Pour into prepared tub of ice cream machine. 

Churn about 15 to 20 minutes. 

Scoop and enjoy! Makes about 3 cups. Freeze any leftovers so you can make a milkshake the next day (recipe below).
