More and more of us are at least incorporating grain-free recipes in our diet, if not totally being grain free. I find your information on that topic compelling to say the least. I also greatly appreciated your analogy of the likelihood of an intestinal biopsy (the gold standard for diagnosing celiac) finding damaged villi to be like dipping a bucket into an ocean and expecting to come up with fish---how very, very true! Even celiac experts like Dr. Stefano Guandalini (U of Chicago Celiac Disease Center) are stating that folks with extraintestinal symptoms will show little or no intestinal damage, so they merit a celiac diagnosis without a positive biopsy.
