Oh, yes, I forgot to tell you! I made the puffs during the SNOW days that we had here in Georgia. (Snow on the ground for a whole WEEK, unheard of!)
Anyway, I made chicken salad to go with them…and they were wonderful! The taste was so good, but also, the look of them..oh my, they looked like something a caterer would make for a wedding. I’m sorry I LOVE for food to TASTE good, but I like for it to LOOK good too!! 🙂 Oh, and by the way, the tops (or bottoms?) that I cut off the puffs, I put in the freezer and used them to make breadcrumbs to go in my salmon patties! SCORE!

Kay–That’s fantastic feedback–thank you! 🙂 Yes, I love how pretty the puffs are, too, and amazingly easy. I’m going to make them with almond milk tomorrow … fingers crossed. Great job on repurposing the leftover bits, too. Salmon cakes after chicken salad puffs … now that’s a great series of eating. 😉 BTW, when we were on our epic road trip, we went through part of Georgia and saw the snow. From VA to MS … strange.
