Gluten-Free Intense Chocolate Almond Bites. I thought I’d bring this recipe for Flourless Gluten-Free Intense Chocolate Almond Bites to the forefront once again. After all, today, February 16, is National Almond Day.
Years ago, the Almond Board of California hosted a recipe challenge for nutritionists (its Nutrition Pros Know Best Almond Challenge). After the event, the board asked some bloggers to share the winning recipes, review some of their almond products, and/or host a giveaway of the products. I was lucky enough to be one of those bloggers!

In that post, I also shared another one of the winning recipes from the challenge, Flourless Orange Almond Cake. That delightful gluten-free recipe came from Laura Uyemura. (She is currently the Director of Clinical Nutrition Services at City of Hope in California.)
I was even more delighted when I discovered that one of the almond-based recipes that the Almond Board shared with me was from my dear friend, Cheryl Harris, of Gluten-Free Goodness and Harris Whole Health. Her Intense Chocolate Almond Bites had actually caught my eye when she had posted them on her blog earlier.

I don’t know about you but every word of her recipe title–and the actual cookies even more so!—spoke to me and still do. Intense. Chocolate. Almond. Bites.
What’s not to love? These Intense Chocolate Almond Bites are divine! They are also so quick and easy to make and they require only a handful of ingredients.
As Cheryl says, “They’re gluten-free, vegan, paleo-friendly, and super delicious … Quite a combo!”
Plus, they’re flourless. Longtime gfe readers know that I adore flourless recipes. They are richer and more flavorful and almost always simple to make.
Note that I initially shared Cheryl’s recipe in the same post as the Flourless Orange Almond Cake. However, I’ve learned over time that you all prefer when I share single recipes versus multiple recipes in a post. I’m happy to oblige by finally giving Cheryl’s recipe the spotlight here!

Gluten-Free Intense Chocolate Almond Bites Recipe

Intense Chocolate Almond Bites (Naturally Gluten Free)
Cheryl describes these Gluten-Free Intense Chocolate Almond Bites. "They're gluten-free, vegan, paleo-friendly, and super delicious ... Quite a combo!"
Ingredients
- 1 cup whole roasted almonds
- ⅓ cup cocoa powder
- ¼ tsp salt
- ¼ cup honey
- ½ tsp vanilla extract
Instructions
- Preheat oven to 325F.
- Put the almonds, cocoa powder, and salt in a food processor and grind until only small pieces of almond remain, about 2 minutes.
- Add in honey and vanilla extract and pulse for 30 seconds.
- Form into balls the size of a cherry and flatten with your hand or spatula.
- Place on a Silpat mat or parchment-lined baking sheet for ease of cleanup (these cookies do not spread, so feel free to put them close together).
- Bake for 9-11 minutes or until the cookies start to brown.
- The bites harden as they cool after baking.

Makes 20 bites.
