Some of you might remember my review of Olivia “Liv” Dupin’s second cookbook, Gluten-Free Entertaining: More than 100 Naturally Wheat-Free Recipes for Parties and Special Occasions, a while ago. I shared both Olivia’s gluten-free Mile-High Chocolate Cake recipe and her gluten-free Double Strawberry Waffles recipe in that post when I first published it, but these lovely waffles tended to get “lost” in that post so I decided they needed their own post. Don’t you agree?
There are three main sections in Gluten-Free Entertaining: Planning the Perfect Pantry, Celebrating the Holidays, and Special Occasions, with specific meal plans that fall under those sections. Olivia’s beautiful Double Strawberry Waffles are part of the “Easter Brunch” section in her cookbook. However, I can’t imagine any holiday—or any day actually—at which these waffles would not be a welcome addition.
Olivia says: “These crisp, fluffy waffles get a double dose of strawberries with some mixed into the batter and fresh strawberries served on top. The waffle batter could be prepared one day in advance, but only mix in the strawberries right before they go into the waffle iron.”
Olivia also adds that it’s fine to substitute any other fruit or even chocolate chips. Now we’re talking! Either way, these waffles would certainly perk up any breakfast or a “brinner.”
In Gluten-Free Entertaining, Olivia offers you 14 complete meal plans/recipe groupings, which can be used “as is” or you can use the individual recipes in these groupings any time you would like. You don’t have to be hosting an event or be on a date (one section is titled “Impress a Date Night”) to appreciate meals such as Baked Salmon with Roasted Tomatoes, Garlic Shrimp, Green Bean and Bacon Casserole (a sort of “grown-up” version of that other ubiquitous holiday Green Bean Casserole), Lemony Sugar Snap Peas, Crepes with Cannoli Cream, Easy Vanilla Cupcakes, or Mom’s Chocolate Chip Cookies. Yum!
I love a cookbook that has a mix of sweet and savory recipes for us to enjoy! And now for her Gluten-Free Double Strawberry Waffles recipe because I think all of us need really good waffles in our lives and strawberries are readily available right now. I’ll be honest though … I’m seriously considering the chocolate chip version next!
Gluten-Free Double Strawberry Waffles Recipe

Shirley's note: To make your own "buttermilk, add one teaspoon of apple cider vinegar to a glass measuring cup. Then add milk of choice, filling to the one cup measurement. I’ve never tried making waffles, we used to have waffle irons years ago and I remember my husband successfully making some but it was too much of a fuss and I think they were thrown away during one of our house moves. Double strawberry waffles sounds perfect for the Summer months, the book looks fabulous.

Vicky–We love waffles and we received a waffle iron as a wedding gift. I don’t make them often, but usually after I do make them I wonder why I don’t make them more often because they’re so good and actually easy to make. I’ll be sharing a savory waffle recipe in the future. But Liv’s Double Strawberry Waffles are a very happy sweet waffle recipe and, yes, her book is delightful. 🙂

Hi Joy–It’s great to see you here again! 🙂 I actually use my two-ingredient flour mix in waffle recipes all the time. I’ve never had a problem subbing it for the gf flour mix called for in a recipe. So you could use the two recipes that are here on my blog or any other gf recipes. I wouldn’t sub my flour mix for grain-free flours, but if a recipe calls for gf flour mix like the recipe in this post, you should be able to substitute it with no problem. I’d probably add a teaspoon of xanthan gum in this recipe though. When made with a flour mix that includes a lot of oat flour as Olivia’s does, it wouldn’t need it, but my flour mix is much lighter and I *think* it would benefit from adding xanthan gum. You could try it without first though if you liked. Hope all that info helps!

It is amazing how easy it is to not miss out on favorite foods because of gluten issues. The waffles looks delicious. The cookbook looks like it would be a fabulous resource for gluten free entertaining.

I think so often the missing out is in folks’ heads to be honest, plus the product pushers do a good job of hyping that factor to get us to buy their gf convenience products. We don’t have to miss out on anything and we can do a whole lot better with simple homemade recipes than processed products! 😉

I’m always up for a double dose of strawberries and this looks like such an easy recipe to make dairy-free, too! That said, I wish I needed more recipes for entertaining – I’m so bad with that!
