This collection of gluten-free Strawberry Shortcake recipes, which is perhaps the quintessential summer dessert, is totally worthy of Strawberry Shortcake Day (today, June 14) or any time you wish to celebrate the glory of fresh strawberries. Strawberry shortcake is such a beloved dessert that I had to update this collection once again for you.

It’s now well over 30 delicious recipes. There are several new keto recipes, strawberry shortcake cupcakes, and even strawberry shortcake cups!

Ripe juicy strawberries are often ready for picking around here before summer has even officially begun. Even if the picking is done at your local grocery store or farmer’s market so you can make your own gluten-free Strawberry Shortcake. When you consider that truth, trips to the strawberry patch are especially fun but not necessary.

You’re buying fresh strawberries, some of which will get eaten on the way home, and some of which will be used to make gluten-free Strawberry Shortcake. So it’s all good, right?

I’m seeing friends post photos of fresh strawberries and even our local farmer’s market has some on hand, so it seems like the perfect time to share gluten-free Strawberry Shortcake recipes with you once again. Wishing you a happy—and long—strawberry season, my friends!

It seems the earliest version of Strawberry Shortcake was recorded in a British cookbook in 1588 and a version of this dessert didn’t appear in the U.S. until 250 years later. Variations over the years have included biscuits, white cake, sponge cake, angel food cake, pound cake, and even a pastry similar to a heavy pie crust. Early versions used icing but over time the icing was replaced with whipped cream (I approve of that change!).

“True” Strawberry Shortcake requires the sliced strawberries to be mixed with sugar—or at least sprinkled with sugar—and allowed to sit an hour or so. The sugar draws out the juices of the strawberries, which combines with the sugar to create a syrup or glaze. This process is called “macerating” the strawberries, resulting in plumper strawberry pieces with more flavor.

However, I bet I’m not alone in simply topping a piece of good quality gluten-free cake with sliced strawberries and whipped cream and “calling it good” when it comes to homemade gluten-free Strawberry Shortcake! My favorite bases for this kind of version of gluten-free Strawberry Shortcake are pound cake (especially my Perfect Pound Cake) and my Vanilla Pound Cake—with or without the chocolate chips added!) and of course, Angel Food Cake., particularly this recipe.

This is a wonderful collection of recipes! Strawberry shortcake is my absolute favorite dessert but I haven’t eaten it since I am aware of my gluten free needs-( 17 years) -I will definitely have to try my hand at one of these recipes. Love when it happens like that. We tried one of the Paleo shortcakes last night. How can you go wrong with a sweet biscuit, strawberries and coconut whipped cream? Hope the coconut wraps work well for you also. I’ve made them several times now and have been very happy with the results. Camping sounds like a wonderful way to spend the weekend!

  As soon as I get the same type coconut flour that you used, I will make your wraps recipe. After I know how they’re suppose to taste and what the texture is supposed to be like, then I might try making them with the coconut flour I already have on hand, too, to see if it also works. As we discussed, the differences between brands of coconut flour can be dramatic.
  
  Camping was wonderful! Down to 54 at night. Sure made that campfire feel really good!
