A homemade gluten-free ice cream sandwich is a real treat, so I thought I’d share a multitude of recipes from some of gfe‘s favorite contributors. Look at them all before you decide which recipe to make first! Or make a plan to make one new delightful recipe each week. It’s up to you, of course.
4-Ingredient Vegan Ice Cream Sandwiches from Healthful Pursuit ~ Leanne’s simple treats are: “Quick and easy ice cream sandwiches made with crushed gluten-free cereal, vegan chocolate chips, macadamias and banana soft serve.”
Mini “Oatmeal” Raisin Ice Cream Sandwiches from Daily Bites ~ Hallie uses a grain-free “oatmeal” cookie, which contains two key ingredients, and ready-made dairy-free ice cream to create her gluten-free, dairy-free, and vegan mini ice cream sandwiches.Chocolate Chip Cookie Ice Cream Sandwiches from Paleo Mom ~ Sarah points out that there are so many options for dairy-free ice cream now compared to just a few years ago. She says you can use one of those ready-made ice cream products or “go ahead and make your own ice cream!” She adds: “I think they taste better 100% homemade anyway!”Chocolate Banana Ice Cream Sandwiches from Gluten-Free Homemaker ~ This recipe from is grain free, dairy free, egg free, and vegan. Coconut Cacao Nib and Banana Coconut Ice Cream Sandwiches from The Mommy Bowl ~ Deanna’s grain-free, dairy-free, refined sugar-free, and raw ice cream sandwiches are full of delicious, nutrient-dense ingredients.
Dairy-Free Banana Ice Cream Sandwiches from Petite Allergy Treats ~ Laura gives you the skinny on her pretty, healthy, and delicious version of ice cream sandwiches: “They are gluten free, dairy free, vegan, egg free, peanut free, tree nut free and free of the top 8 food allergens. The filling is pure banana, nothing else. Overall, a healthy cool treat just in time for summer.”Peanut Butter & Roasted Banana Ice Cream Sandwiches from Simply Quinoa ~ Alyssa’s ice cream sandwiches are made from her three-ingredient roasted banana ice cream and whole-grain peanut butter cookies. They’re gluten free, dairy free, and more free.

Paleo Mallomar Ice Cream Sandwiches from The Paleo Mom ~ One batch of Sarah’s Magic Shell, one batch of her Paleo Graham Crackers, and one batch of her Paleo Vanilla Ice Cream and you’ll have these fabulous-looking Mallomar Ice Cream Sandwiches.Broinhas and Sweet Corn Ice Cream Sandwiches from In Johnna’s Kitchen ~ Johnna made these ice cream sandwiches using Broinhas, which are Brazilian Corn Cookies, and Sweet Corn Ice Cream. She says that this gluten-free, dairy-free, and refined sugar-free combination of shortbread-style cookies and creamy mildly sweet ice cream “made a terrific hot day dessert!”Pink Peppermint Vegan Ice Cream Sandwiches from The Tasty Alternative ~ Amber seduces you with the “truth in advertising” name for her pretty pink ice cream sandwiches. Pizzelle Ice Cream Sandwiches from The Non-Dairy Queen ~ Sarena uses her homemade gluten-free pizzelles to make her ice cream sandwiches. So pretty and so tasty!Paleo Ice Cream Sandwiches from Oatmeal with a Fork ~ Lauren uses a healthier “ice cream” filling for her lighter, paleo-friendly ice cream sandwich treats.
Raw Ice Cream Sandwiches from Oatmeal with a Fork ~ Lauren pleased her whole family—including her brother-in-law, “the hardcore junk food enthusiast with a penchant for Oreos and ice cream”—with these nut-free, chocolaty cookie and avocado ice cream sandwiches.Go Bananas! Chocolate Almond “Ice Cream” Sandwiches from Pocketfuls ~ Lisa uses several different ingredients to create the magic in her gluten-free, vegan treats.
Grain-Free Chocolate Chip Cookie Banana Ice Cream Sandwich from Tasty Yummies ~ Simple banana “ice cream” is Beth’s filling for her sandwich made from flourless, grain-free, dairy-free, refined sugar-free, and paleo nut-butter (or sun butter) based chocolate chip cookies.
S’mores Ice Cream Sandwiches from Fork and Beans ~ Cara calls these: “A more grown-up and allergen-friendly way to enjoy your S’mores by the campfire.”
Valentine’s Chocolate Chip Cookie Ice Cream Sandwiches from My Gluten-Free Kitchen ~ Michelle uses this “love-appropriate” non-stick whoopie pan to create her heart-shaped, gluten-free chocolate chip cookies. The filling is your favorite vanilla ice cream.
