National Ice Cream Sandwich Day is here once again so I’ve updated this collection of wonderful homemade gluten-free ice cream sandwich recipes for you. You’re going to love checking out all the choices and hopefully, soon, you’ll also making one of these recipes. All of us could benefit from an ice cream sandwich in our lives, right?
Before we get to the recipes, I’m going to share two “cheater” versions. One is to make gluten-free Ice Cream Sandwiches using gluten-free cookies such as gluten-free Vanilla Wafers. You could also use gluten-free animal crackers to make mini ice cream sandwiches or homemade gluten-free animal crackers (using larger animal cookie cutters) to make animal-themed ice cream sandwiches that kids of all ages will enjoy! What’s better than a regular ice cream sandwich? Definitely an animal ice cream sandwich. Especially when you make it using your favorite animal cookies! I mean personally, I’d love an elephant ice cream sandwich!
Want a fancier quick and easy homemade ice cream sandwich? Use these pretty and absolutely scrumptious ready-made gluten-free Pizelles. Order from the maker, Bella Lucia, or Vitacost. (These are not affiliate links; I’m simply a fan.)

One additional note … there are ready-made gluten-free ice cream sandwiches on the market today. To date, I have not consumed any of them. Let me tell you why.
All of the brands I’ve seen to date are made by companies that also make gluten-full products. Some of them are made on the same equipment as the gluten-full versions. Some of them contain oats via oat milk, oat fiber, and/or oat flour.
I’ve yet to see any such products say they use certified gluten-free purity protocol oats. While most of these products are certified gluten free by the Gluten-Free Certification Organization, a program of the Gluten Intolerance Group, which certifies products to less than 10 ppm gluten. You can read more about their certification process on their website.
I don’t believe that any product that contains “mainstream” oats—oats that are grown in the same fields as gluten-containing grains, processed on the same harvesting equipment as those grains, and/or processed in the same facility—is safe. Period. These oats are also called sorted oats or mechanically sorted oats because mechanical sorting is the process that manufacturers use to remove the gluten grains, as many of them as possible anyway. Such sorting NEVER removes all the gluten grains. And certification can never ensure that every single item made by a company is safe. There are gluten hot spots with such oats. A fact that I talked about at length in regard to “gluten-free” Cheerios. Cheerios are not safe for anyone who eats gluten free for medical reasons (e.g., celiac, non-celiac gluten sensitivity).
UPDATE: On April 4, 2023, Gluten-Free Watchdog issued a new statement, Gluten-Free Watchdog Cannot Recommend Any Brand of Gluten-Free Oats. Read the full statement here. This statement was followed by details on recent testing results of gluten-free products that contain oats., which showed 30% of the labeled gluten-free oat products tested contained quantifiable gluten.

Homemade Gluten-Free Ice Cream Sandwich Recipes
~ 4-Ingredient Vegan Ice Cream Sandwiches from Healthful Pursuit ~ Leanne’s simple treats are: “Quick and easy ice cream sandwiches made with crushed gluten-free cereal, vegan chocolate chips, macadamias and banana soft serve.”
~ Brownie Cookie and Coffee Ice Cream Sandwiches from Against All Grain ~ Danielle uses her Brownie Corner Cookies and creamy Coffee Ice Cream to make these out-of-the-world ice cream sandwiches!~ Brownie Ice Cream Sandwiches from Fearless Dining ~ Sandi uses either her homemade gluten-free brownie mix or a ready-made gluten-free brownie mix. Likewise, she says you can use store-bought ice cream. Last, as you can see, she dresses her ice cream sandwiches with sprinkles or chopped peanuts (or nuts). I’m sure you know which ingredients your family and friends will love!
~ Caramel Cookie Dough Ice Cream Sandwiches from The Fit Cookie ~ Sarah creates the cookie dough and caramel layers and relies on So Delcious Cookie Dough Ice Cream for the ice cream layer. The resulting ice cream sandwiches are not only gluten free but also dairy free, egg free, and vegan. She said: “My kids loved these, and were so excited that there was a decadent ice cream treat that they could eat. We had some friends try these ice cream sandwiches as well, and they didn’t even know they were allergy friendly. Win!”
~ Classic Paleo Ice Cream Sandwiches from Against All Grain ~ Despite looking like the ice cream sandwiches we remember from childhood, Danielle’s luscious ice cream sandwiches are made using coconut flour, coconut milk, arrowroot powder, and a few other simple ingredients.

~ Classic Vegan Ice Cream Sandwiches from Better Batter ~ Naomi admits that her recipe requires some planning and prep but her ice cream sandwiches taste like the ones you remember–and they’re gluten free and vegan (no dairy, no eggs). She says that “most recipes out there either give you a recipe for crisp wafer or a soft cookie. The best texture – the one closest to the commercial variety – combines these. Any good recipe for an ice cream sandwich requires cookies that are soft when frozen but still firm when thawed.”
Classic Vegan Ice Cream Sandwiches from Better Batter
~ Cookie Dough Ice Cream Sandwiches from Flippin’ Delicious ~ Brianna used her very popular edible cookie dough for the outside and So Delicious Coconut Cookie Dough Frozen Dessert for the filling so these ice cream sandwiches give you double the cookie dough factor! She does add that you could use So Delicious Cashew Chocolate Cookies and Cream Frozen Dessert for the filling if you prefer. All these options are not only gluten free but also dairy free and vegan.

~ Easy Ice Cream Sandwiches from Unconventional Baker ~ Audrey says it best: “Cashew + Vanilla + Banana + Chocolate Fudge… this is what summertime tastes like … No baking, no churning, but lots of delicious “ice cream” in sandwich form seemed the way to go.” I love that her recipe is also gluten free, dairy free, and vegan. She says that you can even turn this recipe into an ice cream cake if you like. Ice cream cakes are always a huge hit!

~ Kitchen Sink Cookie Ice Cream Sandwiches from Faithfully Gluten Free ~ Once you see the ingredients in Jeanine’s Kitchen Sink Cookies, you’ll agree that they earn their name. I bet you’ll also agree with this statement once you give her ice cream sandwich recipe a try: “These chewy cookies, which are slightly crisp around the edges, are great paired with a tall glass of cold milk. But, they are also the perfect cookie to pair with your favourite gluten free ice cream.”

Shirley, So excited with this great collection though I’ll have to admit I’ll probably start with the cheater versions. Appreciate the info on the pizelles, thinking they would be great if dipped in melted chocolate…. Had been planning on doing a lot of baking with my granddaughters this week but the whole family came down with covid, and though they are recovering well, school is starting next week, so may be a while before we get to see them. Oh, and I like the idea of dipping the pizelles in melted chocolate! Bella Lucia does have a chocolate flavor, which is delicious on its own of course but would also be wonderful as the wafer part of an ice cream sandwich. So many possibilities and there’s nothing wrong with going with the cheater versions! I just got some Emmy’s Organics Mint Chip Brownie Snaps in my “produce” box. They would also make some amazing quick-and-easy one-bite ice cream sandwiches! 🙂
