National Ice Cream Sandwich Day is here once again so I’ve updated this collection of wonderful homemade gluten-free ice cream sandwich recipes for you. You’re going to love checking out all the choices and hopefully, soon, you’ll also making one of these recipes. All of us could benefit from an ice cream sandwich in our lives, right? Before we get to the recipes, I’m going to share two “cheater” versions. One is to make gluten-free Ice Cream Sandwiches using gluten-free cookies such as gluten-free Vanilla Wafers. Lynn of Lynn’s Kitchen Adventures told me she does that in this version.
You could also use gluten-free animal crackers to make mini ice cream sandwiches or homemade gluten-free animal crackers (using larger animal cookie cutters) to make animal-themed ice cream sandwiches that kids of all ages will enjoy! What’s better than a regular ice cream sandwich? Definitely an animal ice cream sandwich. Especially when you make it using your favorite animal cookies! I mean personally, I’d love an elephant ice cream sandwich!
Want a fancier quick and easy homemade ice cream sandwich? Use these pretty and absolutely scrumptious ready-made gluten-free Pizelles. Order from the maker, Bella Lucia, or Vitacost. (These are not affiliate links; I’m simply a fan.)
One additional note … there are ready-made gluten-free ice cream sandwiches on the market today. To date, I have not consumed any of them. Let me tell you why.
All of the brands I’ve seen to date are made by companies that also make gluten-full products. Some of them are made on the same equipment as the gluten-full versions. Some of them contain oats via oat milk, oat fiber, and/or oat flour.
I’ve yet to see any such products say they use certified gluten-free purity protocol oats. While most of these products are certified gluten free by the Gluten-Free Certification Organization, a program of the Gluten Intolerance Group, which certifies products to less than 10 ppm gluten. You can read more about their certification process on their website.
I don’t believe that any product that contains “mainstream” oats—oats that are grown in the same fields as gluten-containing grains, processed on the same harvesting equipment as those grains, and/or processed in the same facility—is safe. Period. These oats are also called sorted oats or mechanically sorted oats because mechanical sorting is the process that manufacturers use to remove the gluten grains, as many of them as possible anyway. Such sorting NEVER removes all the gluten grains. And certification can never ensure that every single item made by a company is safe. There are gluten hot spots with such oats. A fact that I talked about at length in regard to “gluten-free” Cheerios. Cheerios are not safe for anyone who eats gluten free for medical reasons (e.g., celiac, non-celiac gluten sensitivity).
Homemade Gluten-Free Ice Cream Sandwich Recipes
~ 4-Ingredient Vegan Ice Cream Sandwiches from Healthful Pursuit ~ Leanne’s simple treats are: “Quick and easy ice cream sandwiches made with crushed gluten-free cereal, vegan chocolate chips, macadamias and banana soft serve.”~ Brownie Cookie and Coffee Ice Cream Sandwiches from Against All Grain ~ Danielle uses her Brownie Corner Cookies and creamy Coffee Ice Cream to make these out-of-the-world ice cream sandwiches!

But, they are also the perfect cookie to pair with your favourite gluten free ice cream.”

They’re everything you could want in an ice cream sandwich and more!” As you can see, she used a Mickey Mouse cookie cutter to make her ice cream sandwiches as she made them and then took them to Disneyworld so she could enjoy a ready-made ice cream sandwich like other guests.

They’re the perfect treat for holidays like Memorial Day, July 4th, and Veteran’s Day but to be honest, there’s no occasion where patriotic treats won’t be appreciated.
~ Peanut Butter & Roasted Banana Ice Cream Sandwiches from Simply Quinoa ~ Alyssa’s ice cream sandwiches are made from her three-ingredient roasted banana ice cream and whole-grain peanut butter cookies. For the final touch, they’re rolled in chocolate bar pieces and peanuts, if you wish. Oh, I do! ~ Hot Fudge Ice Cream Sandwiches from Lynn’s Kitchen Adventures ~ Lynn uses her gluten-free chocolate chip cookies, ready-made ice cream, and a layer of her homemade hot fudge to create these decadent ice cream sandwiches. ~ Ice Cream Sandwiches from Forest and Fauna (this site is no longer active so, I’ve linked to the recipe via the Wayback Machine) ~ Andrea covers so many allergen-free bases with these gluten-free, grain-free, dairy-free, nut-free, vegan, raw, and paleo treats. Mmmmm – now I want to eat them all. 🙂
Deanna–Exactly! Imagine how I felt as I compiled the post! If I’d had any of those gluten-free chocolate tortillas in the house, I would have *started* with that simple version. 😉
I’m drooling …..pinned and shared!
They really are something, aren’t they, Vicky? It was fun compiling them all. As I said to a friend on Twitter, having a mini ice cream sandwich bar (say 1/2 bite pieces) with all of these recipes would be fantastic! She agreed, of course. 😉
Wow, now all we need is an ice cream stand serving all these delectable ice cream sandwiches! Love this fun round-up!
Jeanette–Now that’s another fantastic idea! Although we all might stand there in angst trying to decide which one to choose! 😉 Thanks, dear!
Oh my goodness, where to start? I want to make all of these. Thanks for another really terrific round-up! These are my go-to resource when I need a recipe for a sweet treat.
Johnna–You are one of AGFD’s biggest fans! I never get tired of hearing that–thank you! I’m glad you are enjoying these roundups as much as I enjoy creating them and sharing them! 😉
Sarena (The Non-Dairy Queen) says
Now I need ice cream sandwiches! Everything looks amazing!
There’s definitely an immediate cause and effect there, isn’t it, Sarena? 😉 I was so happy to find your Pizzelle Ice Cream Sandwich concept to include! Thanks on all!
Jeanine - the Baking Beauties says
Wow – look at that variety! Love them all!
Hi Jeanine–I know … I had no idea that I’d find so many delightful variations when I started! 🙂 So glad I could include yours, dear!
Wow, how did I not know that all of these amazing ice cream sandwich recipes were out there! Drooling!
Thanks for including me Shirley.
I know, Alisa, aren’t they something? As I was saying it was both wonderful and “hard” to compile all these recipes. 😉 Love that I got your recipe in since I’d missed your pudding recipe in the earlier roundup. My new MO is to go back and add recipes if I find them later, even if I don’t get them in the photo collage if I do one. I HATE leaving good recipes out!
You are too awesome 🙂
Awww, thanks, Alisa! Just added your decadent chocolate pudding recipe to that roundup. 😉
These are so amazing! I love the wide range of ideas and creativity. What a blogosphere. Thanks for sharing mine too Shirley. xo
Maggie–I smiled when I read your comment. Yes, what a blogosphere indeed, and you are welcome, of course! 🙂 We have some truly brilliant blogging folks and there’s always something for everyone! 😉
Adrienne @ Whole New Mom says
Hi Shirley! just an fyi – spunky coconut’s link is wrong: http://www.thespunkycoconut.com/2012/01/chocolate-chocolate-ice-cream-sandwiches/
Thanks for looking out for me, dear! I know that Kelly’s site made some changes a while back and links changed. I bet I need to do a scrub on all the links to her site.
Adrienne @ Whole New Mom says
The S’more one isn’t correct either. Thanks!
The only explanation for this one though is “operator error.” 🙁 Fixed now. Thanks again, Adrienne!
Very nice collection thanks for sharing with Hearth and soul blog hop.
Hi Swathi–I’m playing catch up after being away. Thanks for sharing and for co-hosting Hearth and Soul Blog Hop, of course! 🙂
Delicious, thanks for sharing with Hearth and soul blog hop, pinning and tweeting.
Shirley Braden says
I think Ice Cream Sandwich Day should be every day! 😉 It’s a little bit harder to do that when one is gluten free, so we must get creative. 🙂 Thanks for sharing, Swathi!
April J Harris says
This post is such a wonderful resource, Shirley. I adore ice cream sandwiches, they are such a treat! The Toll House Ice Cream Sandwich would be my first choice, and I’m really intrigued by the Pink Peppermint Vegan Ice Cream Sandwich. Thank you for sharing this very timely post (it’s 95 F here today!) and for being a part of the Hearth and Soul Link Party Community. I’m featuring this post at the party this week. Hope to ‘see’ you there! Take care, stay well, and I hope it’s a good week for you.
Shirley Braden says
Wow, thanks so much, April!! And I agree with you on loving the concept of a pink peppermint ice cream sandwich! 🙂
Shirley, So excited with this great collection though I’ll have to admit I’ll probably start with the cheater versions. Appreciate the info on the pizelles, thinking they would be great if dipped in melted chocolate…. Had been planning on doing a lot of baking with my granddaughters this week but the whole family came down with covid, and though they are recovering well, school is starting next week, so may be a while before we get to see them. Thanks again.
Shirley Braden says
Hi, Nancy–I’m so sorry to hear about your family having COVID and that there will be a big delay in you all getting together and baking but it’s so good to hear that they’re recovering well. Oh, and I like the idea of dipping the pizelles in melted chocolate! Bella Lucia does have a chocolate flavor, which is delicious on its own of course but would also be wonderful as the wafer part of an ice cream sandwich. So many possibilities and there’s nothing wrong with going with the cheater versions! I just got some Emmy’s Organics Mint Chip Brownie Snaps in my “produce” box. They would also make some amazing quick-and-easy one-bite ice cream sandwiches! 🙂
Yum, mint chip brownies…I’m going to have to get some of those!😋
Shirley Braden says
These crisps are quite good and come in a small package–which is a good thing IMO. 😉 Enjoy!
