November 21 is National Stuffing Day, which is timely of course as Thanksgiving, the day when stuffing gets center stage, comes a few days later. I’m betting that some of you still need an excellent stuffing recipe for your family celebration. I’m here to help with an updated collection of delicious gluten-free stuffing recipes. Or would they be considered dressing recipes? There are clear definitions of each but most of us don’t worry about them. We use the labels that we learned growing up whether they’re technically correct or not.

There are “just gluten-free” recipes but also gluten-free and dairy-free, paleo, keto, Low FODMAPS, and recipes. There are recipes made using bread (homemade—traditional, French bread, and sourdough—or store-bought), recipes made using mushrooms, long grain and wild rice recipes, cornbread recipes, cauliflower recipes, chestnut recipes, quinoa recipes, recipes with the “pop” of cranberries and/or apples, recipes that include oysters, and even my “surprise” stuffing recipe made from tortilla chips!
There’s stuffing made in a baking dish, which you spoon out, but also stuffing muffins, ramekin stuffing cups, and stuffing balls that work as perfectly-sized individual portions. And there’s even a recipe for DIY Gluten-Free Stuffing Mix, which allows you to make one of three variations—depending on the flavor(s) you and your family are craving.
Before we go on, what actually is the difference between stuffing and dressing anyway? Technically, stuffing recipes are defined as those that are stuffed in the cavity of the turkey and baked as it bakes. Dressing recipes are made from the same sort of ingredients but are served as a side dish instead, aka “dressing” for the turkey.
Again, I’m pretty sure that most of us use those terms interchangeably though—and that’s okay with me.
What’s truly important is that the stuffing or dressing we serve is really good. Company-worthy. Holiday-worthy.
There are so many stuffing and dressing preferences. I’m sure you have yours. Ingredients, appearance, and even the smell of stuffing all matter to those who have to have their stuffing during the holidays! But, thankfully (pun intended), I think we’ve covered a wide range of all of those factors in the recipes I’m sharing today.
Unfortunately, we still can’t offer smells—or bites—via websites. You actually have to make the recipe to see if it meets your personal requirements.
Oh, and in case you’re wondering—and this information is very, very important—you cannot safely eat a turkey in which gluten-full stuffing was used. Simply say “no, thanks” when offered that turkey.
By the way, the same is also true of the famous beer can chicken. You can only eat the chicken in that case if the beer that’s used is gluten free; i.e., made from only gluten-free ingredients (not “gluten-reduced” or “gluten-removed” beer—neither of which have the gluten actually reduced or removed, respectively, and are not safe for those who eat gluten free for medical reasons; their processing only makes the gluten in them very difficult to detect via standard gluten testing).

I, too, have a Christmas dinner for my husband’s company coming up. It’s a place we’ve been several times over the years and I’ve never had an issue but I will call them a few days ahead of time to make sure there are options or I’ll eat something at home before I go. They’ve always had safe choices for me—and delicious ones at that, though—so I don’t expect it to be an issue. I hope you learn that they can accommodate you safely with no issues!

So many wonderful idea! I love the chestnut and the cauliflower stuffings. Since I don’t make Turkey ( vegetarian) I don’t usually make stuffing- but what a great idea to stuff a squash with a holiday stuffing.

I’m so glad you appreciated those “alternative stuffing recipes, Judee. I say “alternative” but I actually believe chestnut-based stuffings have been around a long time. My late mother-in-law would make stuffing using chestnuts grown on her tree. And, yes, so many vegetarian foods can be stuffed, which makes for fun and deliciousness.

Thanks so much, what a find! We did sausage stuffing this year, our first year without Pepperidge Farm! It was very good, but it got soggy after a few days so we baked it and voila! My husband did all the cooking, I was very unwell for Thanksgiving and am not yet recovered. So that’s what I’m thankful for this year, his support. He worked really hard on the stuffing, so I’m going to share this with him.
