This gluten-free Mexican Lasagna Casserole recipe is one of those recipes. I’m sharing it just in time for your Cinco de Mayo celebration but I’m sure that you’ll be making this delicious, crowd-pleasing recipe much more often than once a year!
This recipe is what I call a naturally gluten-free recipe, which means no gluten-free specialty ingredients are needed. As always, of course, you do need to ensure the gluten-free status of all the ingredients that you use. Ingredients such as corn tortillas, refried beans, and taco seasoning for this gluten-free Mexican Lasagna Casserole recipe.

Linda says: “This Mexican lasagna casserole has been a great hit with my family and friends. Double, triple, or quadruple the recipe for feeding a crowd. You can make the casseroles ahead of time and then just heat them in the oven. Gluten-free cornbread goes great with this. One recipe feeds our family of five with maybe a little leftover. Double it to make the larger typical lasagna size (9 x 13 baking dish) casserole.”
Gluten-Free Mexican Lasagna Casserole Recipe
