Friends are reporting fabulous harvests of zucchini this year so I thought it was time to update my gluten-free zucchini dessert recipes roundup. I hope you’ll agree!
Goodness, you can use zucchini to make some really incredible gluten-free desserts, folks. I found over 60 clearly fabulous gluten-free zucchini dessert recipes in our gluten-free blogging community. Here’s a sampling below.
Who knew there were so, so many excellent gluten-free zucchini dessert recipes? Good timing, Shirley. I have a zucchini the size of a baseball bat available for multi-recipe testing. Already made a batch of my tried and true fresh apple zucchini bread. I still have about a foot and a half of that zucchini left. And some blueberries. Several good options among your VAST selections.

This post will certainly help gardeners with lots of leftover zucchini crop! I’m thinking the crops in northern California weren’t stellar this year, as there hasn’t been a big zucchini push at the local markets like usual.

This is my first year to grow zucchini and we have very good soil up here in Minnesota. I had heard the jokes about having an abundance of zucchini and now I understand! Wow! I planted just a few seeds and have huge plants and have brought in some huge ones – they grow over night it seems. I am shredding and freezing and now I have more recipes – thanks! I made zucchini bread already but had a reaction (I am celiac, but have other food allergies not pin-pointed yet) and now wondering if I am allergic to cinnamon, or as someone mentioned – buckwheat. Zucchini breads and deserts all winter now from my freezer.

I love this! We have oodles of zucchini since we let it be known far and wide that we’ll take everybody’s extras to help feed our big family. 🙂 I’ve been using it on the grill and also developed these wonderful triple chocolate zucchini mini donuts (gluten free, dairy free, soy free, corn free, etc. but does have sugar and eggs) and that was a big hit with the kids. I also read a great tip to shred zucchini, press out the moisture and pack it into one cup measuring cups and pop them out and freeze them like that on a baking sheet until hard, then bag them up as one-cup zucchini “pucks” for baking later. I thought that was brilliant and will doing that as well. I’m so happy to have all these recipes to try out with some more of the excess though. Pinned and shared. Thanks!

PERFECT timing!! We have plenty of zucchini growing!!! So many wonderful recipes. One of my faves was a chocolate coconut zucchini bread/muffins. It wasn’t GF because we are not GF. I do cook a lot for other family members that are GF and one is also GF,DF.
