Today’s Gluten-Free Chewy Pecan Squares would make a terrific addition to your holiday cookie tray! They are sweet, nutty, and delightfully chewy—as promised.
The surprising thing about this recipe is that it is made from just a handful of ingredients and does not include any butter or oil. In fact, because of the latter factor I was not even sure that I was going to share these Chewy Pecan Squares with you all—at first.
I did not even take photos until there were only four squares left. Four squares that were haphazardly cut, I will add.
And the photos I’m sharing may not be blog worthy. But here they are anyway because I think you can still see how good these Gluten-Free Chewy Pecan Squares are and I know you all will want this recipe.
And you will want it now! Not when I re-make the recipe again down the road and take some better photos.
As far as no butter or oil being included in this recipe, I concluded that the fat from the pecans provides all that is needed to make this recipe work.
The true test of the goodness of these Gluten-Free Chewy Pecan Squares was that eating one led to eating another. Even after I decided I was “done” with them, they kept calling my name.
So, it’s best to make these when you have some helpers around!
These Gluten-Free Chewy Pecan Squares are another recipe that I made from one of my old gluten-full cookbooks, the same church cookbook these Flourless Gluten-Free Coconut Macaroons were adapted from.
For today’s recipe, I simply subbed in my Two-Ingredient Gluten-Free Flour Mix for the gluten-full flour. My mix does not include xanthan gum and I did not need to add any for this recipe but if your gluten-free flour mix includes xanthan gum, it should still work just fine for this recipe.
I also halved the recipe and used an 8 x 8 baking pan because the original recipe called for an odd-sized, rather large pan and made a lot of squares.

I am looking forward to trying this recipe, but I do have a couple of questions:
I do not use rice, flour, as I have to watch my blood sugars. I stock almond and coconut flours. Would it work to use one of these, a combination, or not? Should I add xanthan or another ingredient?
Also, do I understand the directions correctly? Mix all the dry ingredients in with the egg mixture on the stove? Thank you for any help you can offer. I am looking forward to trying this, as I love pecans!

Hi Julie–It’s great to see you here at gfe again! The recipe does not require rice flour per se. Any gluten-free all-purpose flour mix will work but rice-free ones probably won’t work for you either. I like using grain-free flours and starches myself but I have not yet tried making this recipe with any of those and without having done that, I cannot give you any specific recommendations on how to do so. I will say that I don’t ever have to use xanthan gum when making a recipe with grain-free flours and starches. Last, yes, you read the directions correctly. That is exactly how you make it. If you do any experimenting with grain-free flours and starches, please let us know how that goes and I promise to do the same. 🙂 Fingers crossed!
